This is a great squid seafood recipe for either a quick snack, appetiser or to add to a main meal like steak and salad.
Serves 4

Ingredients

  • 4 x medium squid tubes
  • 1 lime
  • 2 medium red chillies (mild)
  • half a teaspoon of rock salt
  • 20ml of olive oil
  • 1 small bunch of fresh coriander
  • 1 small bunch of fresh mint
  • 2 teaspoons of fresh crushed garlic

Finley chop herbs and chilli.
Clean squid tubes and cut tubes into rings or strips if you prefer.
Heat a pan to a medium high temperature.
Add oil and wait for it to heat.
Add garlic, half the salt and chilli and cook for 2 minutes or until garlic starts to brown.
Add squid and cook for 2 minutes stiring constantly.
Remove from heat
Season with remaining salt.
Add herbs and stir through.
Serve onto plate and squeeze lime over. 
For a tastier meal pour the pan juices on to the sevings but if you are after an attractive serve drain excess juices before serving (still tastes fantastic).
